Chicken Tortellini Soup

Nothing like a nice bowl of comfort for a rough and cold day. This soup came out tasting like chicken noodle but, BETTER! I had to substitute the tortellini for mini ravioli's because well that's that what I had and used garlic in place of onion. It still come put pretty darn good and it gave me enough time to make a homemade apple pie for dessert!

1 lb. boneless, skinless chicken breast, cooked and cubed
9 oz. pkg. cheese tortellini or ravioli, uncooked
46 oz. chicken broth
1 cup carrots, peeled and chopped
1/2 cup onion, chopped
1/2 cup celery, sliced
1/2 tsp. dried thyme
1/4 tsp. pepper
1 bay leaf


1.Combine all ingredients in a stockpot; bring to a boil over medium heat.

2.Reduce heat, cover and simmer until tortellini or ravioli is tender.

3.Discard bay leaf.

4.Serves 6
