Another cold day here in Fort Belvoir. Saturday is usually theme night. This is when I cook food from a different region, culture or country. I love to explore the world of cooking, so many flavors so hard of a time to pick what to cook!
Well with that being said and done enchiladas are so easy and simple to make. I use about 5-6 ingredients total to make mine, and yes they do taste better the second day. I also serve Spanish rice on the side!
1 16 oz. can fat free refried beans
1lb. ground beef, leaner the better
2 10 oz. can medium enchilada sauce (use whatever spicy flavor you like)
1 packet low sodium taco seasoning
8 12 in. tortillas
1 16 oz. pkg. shredded cheddar cheese
1.Preheat oven to 350 degrees.
2.Brown beef, drain and follow directions to taco seasoning packet.
3.While meat is browning, spread a thin layer of refried beans on tortillas.
4.Follow this up with a light sprinkling of the cheese, then a layer of meat.
5.Fold tortillas over filling and place seamside down in prepared baking dish.
6.Pour sauce over tortillas and sprinkle tops with cheese.
7.Bake for 30-35 min. Till cheese is completely melted.
