Grilled Steak Tacos

Yeah I have noticed a pattern going on here with this. I am night behind of what I cooked...hahah Oh well, between sick kids and school I will always be a night behind of what I cooked. I will say that this way better than taco bell's version and less salty than there's too!

1lb. skirt or tri-tip steak, trimmed of fat and silverskin salt and pepper to taste 2 cloves garlic, minced
1 tsp. dried organo 1 Tbsp. lime juice eight 6-in. tortillas 1 bunch coarsley chopped cilantro leaves (1/2 cup)
2 peeled, seeded, and sliced avocados 1 bunch scallions, sliced diagonally 
Garnish: shredded lettuce, fresh salsa

1. Prepare hot grill in a gas or charcoal grill. Or you can pan sear the steak if these options aren't available to use.

2. Half an hour before grilling, season steak evenly with salt and pepper. rub with garlic, oregano, and evenly drizzle with EVO and lim juice. Turn to coat evenly steak and refrigerate.

3. Grill steak over high heat for 1-1/2 min per side, or until it's caramelized on the outside and pink on the center. Let sit 5 min. before slicing into 1/4-in. strips across the grain (at a right angle to the way the meat's fibers are running). Serve imedately with warmed tortillas, garnishes, and plenty of salsa.
