Well I had some fish already thawed out and said why not do lemon pepper fish, been a right good while since I did that. Serve with a nice rice pilaf and a veggie. It's a simple and quick family meal that won't have you slaving in the kitchen all day!
2 Tbsp. lemon juice
2 Tbsp.extra-virgin olive oil
1-2 tsp. black peppercorns
1/2 tsp. salt
4 catfish fillets, (about 1 pound total)
1 lemon, cut into 4 wedges
1.Whisk together lemon juice, oil, pepper and salt in a shallow nonreactive dish. Add catfish and turn to coat with marinade. Cover and refrigerate for 30 minutes.
2.Preheat oven to 350 degrees.
3.Place fish on foil that has been sprayed with cooking spray. Season with a little extra pepper and lemon zest. Wrap like a package and place on a baking sheet. Cook for 35-45 min. Serve with lemon wedges, and your choice of sides.
