Well it's that time to try some new recipes and a new cookbook to give my GooseBerry Patch books a rest. Since I have had this book for some time, I noticed how low fat most the recipes are and the fact that you use fresh produce when making these recipes...I told hubby why not?
So here is the first dish I made...I will say that my polenta took a while to set up and the vegetables were really good. DH wasn't to impressed with this recipe...Hopefully he'll like tonight's dinner.

2 cloves garlic, peeled and chopped
1 medium onion, peeled and chopped
1 carrot, peeled and diced
2 celery stalks, diced
1 yellow bell pepper, cut into thin strips
Fresh sage, or 1 tsp. dried sage
Fresh thyme, or 1/2 teaspoon dried thyme
1/4 cup and 2 1/2 Tbsp. olive oil, divided
Salt and pepper to taste
1/2 cup white wine
8 asparagus spears, stems cut into 1-in. pieces, tips reserved
24 green beans, cut into i-in. pieces
1 zucchini, diced
2 medium tomatoes, diced
Fresh basil, or 1 tablespoon dried basil 1/2 cup water
Polenta
2 quarts cold water 2 cups coarsely ground cornmeal 1TBSP.salt
1.Prepare vegetable sauce before or during the preparation of polenta: In a med.-sized pan, heat olive oil over medium heat. Add the garlic, onion, carrot, celery, yellow pepper, sage, and thyme and cook, stirring often, until veggies are soften, 8-10 min.
2.Season with salt and pepper and add the wine. Simmer until wine is reduced by half, about 3 min. and then add the asparagus spears and beans. Cook, stirring frequently, for 10 min.
3.Add zucchini, tomatoes, aspargus spears and beans. Cook, stirring frequently, for about 10 min.
4.Serve the veggies mixture over a generous mound of polenta.
Polenta Directions:
1.Combine the first 4 ingredients in a large saucepan. Turn the heat to med. and cook, stirring constantly.
2.When the polenta begins to boil, lower heat to a simmer and continue cooking, stirring often, for 40-45 min.
3.It should be the consistancy of soft ice cream and pull away from the sides of saucepan.
4.If it's too stiff, add a little hot water.
