Pollo Alla Cacciatora (Hunter's Chicken)


This was sooooo good! The chicken was moist and almost fell off the bone. I served this with sauted mixed peppers with garlic and garlic potatoes. What a meal!

3-4 lb. whole chicken, cut into pieces or get 2 pkg. of whole chicken cut up
salt and pepper to taste 1/2 cup olive oil 5 cloves garlic, peeled
1/2 tsp. red pepper flakes 1 tsp. dried rosemary
1 lemon juiced, with lemon halves reserved (about 3 Tbsp.) 1/2-1 cup white wine
3 cup fresh plum tomatoes, peeled and seeded (or use canned tomatoes)
1 cup olives black or green, pitted ( I didn't use this to control salt intake)

1.Season chicken with salt and pepper.
2.Heat olive oil in large skillet. Add garlic, red pepper flakes, rosemary, and chicken pieces and cook, turning pieces occasionally, for 20 min.
3.Drain fat from pan and stir in wine and lemon juice. Simmer, reducing liquid by half. Add lemon halves, tomatoes, and olives and simmer for 30 min. If the sauce becomes to dry add a little chicken stock or water. Adjust the seasoning with salt and pepper and serve.
