I made this dish Feb. 24th and this was super yummy. It was great, filling and warmed us all up. It was really cold and chilly night at Fort Belvoir. This was simple and quick to make! (Note: Buy precooked cannellini beans)
3 Tbsp. Olive oil 1 pkg. Italian sausage, cut into 2-in. pieces. 8 cloves garlic, peeled 1 tsp. sage
1/3 cup white wine 1 cup peeled and chopped tomatoes 5 cups cannellini beans ( I used canned)
salt and pepper to taste
1.In large skillet, heat oil over med. high heat. Add sausage, garlic, and sage to cook. (Note: I didn't use the olive oil, because the sausage makes more than enough grease to cook everything else.) Turn occasionally so that sausage brown evenly. Lower heat to med. low heat and continue cooking, loosely covered, until sausages are cooked through, about 10 min. Drain and discard fat from skillet.
2.Add wine and let it boil until it completely disappears, about 3 min. Add tomatoes and beans and season with salt and pepper. Simmer for 10-15 min. adding a touch of water, if necessary, to keep mixture moist.
