August 7th National Raspberries in cream day



So with summer almost at an end and these lush yummy berries at their peak what could be better than raspberries in cream? I could think of a few things such as raspberry cheesecake, raspberry sorbet and even homemade raspberry ice cream. Lets see what super yummy recipes you come up using raspberries and cream...I'll start you all off with a recipe and links!
 
 Ingredients
2 cups fresh blueberries or raspberries
4 ounces reduced-fat cream cheese, at room temperature
2 teaspoons honey
3/4 cup low-fat vanilla yogurt, drained
2 teaspoons freshly grated lemon zest
fresh mint (to garnish)

 Preparation
1. In a mixing bowl, add the yogurt, cheese and honey.
2. Using an electric mixer, beat at high speed until light and creamy.
3. Stir in the lemon zest.
4. Layer the blueberries (or raspberries) and lemon cream in dessert dishes or wineglasses.
5. Garnish with a sprig of mint and serve.
